Step
Either use the fish frozen or let it defrost before using it. After defrosting, rinse the fish under water and dry thoroughly.
Step
Make the marinade: Crush garlic, juice the lemon and add salt, olive oil, spices and tomato paste. Coat the fish from both sides and place in a metal deep baking tray that has thinly been coated with oil.
Step
Heat the fan oven to 220 °C and cook the fish for 15 to 20 minutes until lightly dark patches appear on the surface.
